Ingredients
  

  • 8 oz pasta (penne, fusilli, or spaghetti)
  • 1 block (200 g) feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1/4 tbsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Notes

  • Preheat oven to 400°F (200°C).
  • In a baking dish, place cherry tomatoes and feta block in the center. Drizzle with olive oil, sprinkle garlic, oregano, red pepper flakes, salt, and pepper.
  • Bake uncovered for 30 minutes, until tomatoes burst and feta softens.
  • Meanwhile, cook pasta according to package instructions. Drain and set aside.
  • Remove the baking dish from oven and mash feta and tomatoes together to create a creamy sauce.
  • Add cooked pasta and toss to coat evenly.
  • Serve warm, garnished with fresh basil and extra olive oil if desired.
